Mouth Watering Gobi (Cauliflower) Manchurian
Gobi (Cauliflower) Manchurian Process:

Ingredients:
- Gobi/Cauliflower – 1
- Salt – 2 to 3 tea spoons (as per your taste)
- Chilli powder – 3 tsps
- Coriander powder – 3 tsps
- Chat masala – 2 tsps
- Jeera powder – 2 tsps
- Besan – 3 to 4 table spoons
- Tomato puree – 1 cup
- Onion – 1
- Capsicum -1
- Coriander leaves – 10 leaves
- Garlic – 4 to 5 cloves of garlic
Method:
- Cut the Gobi/cauliflower into medium sized florets.
- Thoroughly wash them preferably add salt while washing. Drain it completely.
- In a large pan take 2 liters of water and bring it to boil. When the water begins to boil slowly transfer the drained Gobi from the bowl into the boiling water. Cover the pan with a lid and switch off the stove. Leave it covered for 2 min .
- Open the lid and drain the water completely. Be cautious as the water will be very hot.
- Spread the drained Gobi on a wide pan.
- Sprinkle salt, Chilli powder, chat masala, coriander powder on the Gobi and mix it evenly.
Take care not to break the gobi as it will be a little soft.
- Add Besan to the gobi mix well, use 2 table spoons water if needed to keep the besan sticking to the gobi. The besan must stick to all the florets of gobi.
- Heat oil in a pan . once the heat reaches medium hot, slowly drop the florets into the oil and fry until slight brown (do not burn them). Fry all the florets in the similar way. Keep aside.
- Heat some oil in another pan and add finely cut garlic and capsicum along with finely cut onions and few curry leaves and fry them. Once this is ready pour the tomato puree to this and mix well adding a pinch of salt and chilli powder as per taste. Switch of stove when the puree mixture gets to boiling stage add 2 table spoons of water (based on the thickness of the gravy you like).
- Keep the mixture aside till it almost cools down (stays warm). At this stage add the fried gobi florets to the puree mixture and mix well.
- You can add raw onions on this if needed.
- Serve when warm and enjoy the flavors.
